A Bit More Comedy

Ethan is our child who keeps us laughing. Last night at dinner I made these super yummy Chicken Puff Pastry Things (yes, that is the technical name) and Ethan took a bite and said, "Ooh, these are yummy. They taste like dead chicken nuggets!" Aaron, however, was unconvinced and did not want to try this new and very weird food. I asked him, "Aaron, does mommy ever make really gross food like lizard toes? It is good food, just try it!" Jerry, always the helpful husband, said, "Not lizard toes, but I think I saw cat on the menu!" Ethan chimed in, "You can't eat cat! (Whew, glad he knows that!) It would taste hairy!" Yeah, that's the reason I was going to give for not eating cat, too...

that's so cute! this recipe looks good. pretty fancy ingredient. fontina cheese? fig preserves? did you substitute or leave out any ingredients?

I did loads of substituting, Marie! I couldn't find fig preserves or fontina cheese. I substitued appricot preserves since I knew appricots go well with chicken. For cheese, I knew fontina is a good melty cheese, so I got a soft mexican cheese that is also a good melter - queso fresco. I clipped the fresh rosemary right from our garden! Mmmmm, so good!

I was thinking to myself that I'd rather eat dead chicken nuggets than live ones! Who wants to hear a chicken cluck at you as you take a bite?? :)

Wow, they do look really good! I just may have to try these out.

How'd you know all that stuff? I don't even know what fontina cheese is. And how'd you know that apricot goes with chicken. Ewww, I'd probably just leave the preserves out.

Oh yum, fresh rosemary!

And I burst out laughing at "dead chicken nuggets!" LOL!

I only knew what fontina cheese is because Giada used it once on Everyday Italian. So I knew it was a mild, super melty cheese. You cannot leave the apricot or some preserve out. It really adds a nice slightly sweet flavor. And you only use about a teaspoon in each one. It melts to coat the chicken and is really mild. Hey, if I am going to try both tomato soup (tonight in fact) and split pea soup for two certain ladies I know, you can be brave enough to try apricot preserves with Chicken!

...ok...I'll try it...

i just saw fig preserves at whole foods, so it does exist. i think it sounds yummy, actually.

Joanna - I'm so proud of you for being willing to branch out!

Marie - I figured you could get the fig preserves and the right cheese at whole foods - I just don't have one close by. I looked at Wal-Mart, which is just where I happened to be and when they didn't have them, I went straight for substitutes because I wasn't willing to drag the kids from store to store finding what I wanted!

Actually Johanna, I think their technical name is "Love Birds," I'm not so sure about that chicken pastry things name. You might be reaching there.

Yeah, yeah. But if I had said we were eating love birds for dinner, do you think some of you out there would have really worried about me and my sanity????
