Sugarless Pizza Dough

I've been using my food processor a lot to make bread. The author of my favorite cookbook makes almost all of his bread in the food processor and he's got this really quick and wonderful recipe for pizza dough that doesn't have any sweetener in it and I thought you might like it.

Mark Bittman's Pizza Dough

3 cups flour
1 t yeast (I just used one packet)
1 to 1 1/4 cup warm water
2 t salt
2 T olive oil

Put the flour, yeast and salt in a food processor and start it. Pour in the olive oil and water through the tube and let it mix for 30 seconds. It should be sticky, but not too sticky. Dump it out on a bit of flour and knead it by hand for about 30 seconds to make it a ball and put it in a greased bowl. Let it rise for and hour or two and the make some pizza.

Just so you know, Mr. Bittman's directions were a wee bit more thorough than that; those are my condensed directions.

Ooh, looks yummy! I have never used my food processor to make dough before. I've seen it done on cooking shows before, though. Does this one rise well? I get frustrated with my current pizza dough recipe because it doesn't really rise well after it has been rolled out - even if I let it sit on the pan for a while before I top it.

Gee, I never would have known that those weren't the original directions! LOL!

I need some new cookbooks. When I quit eating sugar, I threw out (actually I sold on e-bay) most of my cookbooks because I only used them to make sugary things anyway. I get bored with my current recipes though.

the mark bittman cookbook is wonderful! only the last couple of chapters are sweets and he doesn't really care for sugar either so many of his recipes are pared down on the sugar, or he'll have two versions, the less sugary one or the typical one. i highly recommend it!

well, actually with my pizza dough i let it rise in a bowl and then after it's risen for 2 or 3 hours or however long you want it to rise, roll it out into the pizza shape. immediately bake for about 10 minutes, then top and bake some more. i never let it rise after it's been rolled out on the pizza pan.
